In the center of town, close to Le Boudigau, Isabelle and Johann Dubernet champion bistronomy in this room with its uncluttered decor, light wood and elegant lines. The menu reflects the seasons and local produce: white asparagus from the Landes, smoked trout roe, almond, fig tree oil and flower vinegar; a fine plate of cuttlefish and octopus, vegetable broth with black garlic, chard, chickpeas and garlic; suckling lamb from the Pyrenees in three ways, morel sauce, green asparagus, green pepper and verbena; a Puyodebat dark chocolate niniche, cinnamon, tarragon-anise-rose sorbet. Tasting menu €60.
