A native of the Isle of Beauty, the Toque has no equal when it comes to creating refined dishes that respect the produce. Exceptional products that the Chef selects with care, such as oysters from a small producer in the Rhaetan region. Here, the "circuit-court" finds its letters of nobility, whether it's seasonal vegetables, meats with the Parthenaise breed as guest star... On the seaside, the La Rochelle fish market is Cyril's breeding ground for an ode to the riches of the Atlantic. On the menu, which is renewed every ten days, 3 starters, 3 main courses and 3 desserts in the form of a gourmet trifecta: homemade foie gras, poached egg and chanterelle mushrooms, venison fillet, tuna loin a la plancha and its bear garlic jus with Vendée butter... Respect for flavours, delicate combinations, perfect cooking. A perfect match, just like the homemade desserts. In the cosy dining room, service is by the book, and the icing on the cake is a tour of the tables by the Chef. Just perfect.
