For thirty-five years, the Bonamy family, Pascal in the kitchen and Nadège in the dining room, have been at the top of the Hyères restaurant scene. A rare longevity in this business. A little off the beaten track, over the years their establishment has become the place to be. Whether in the summer garden or the recently modernized bourgeois gray-and-white interior, you'll love the sea bream carpaccio, pink berries, lemon vinaigrette, pickles and herb salad; the plancha-roasted piglet chop, black garlic jus and crisp vegetables; the roasted king prawns, coconut curry cream, potatoes and granny smith; or the sweetbread escalope, full-bodied Rivesaltes jus and lemon confit. A fresh dessert with yuzu tartlet, lemon curd and lemon sorbet. The wine list is well thought-out and the service impeccable. Perhaps the kitchen lacks a touch of madness.
