Chef's Restaurant A magnificent, ultra-contemporary Relais & Châteaux residence in the heart of Alsace, with 5* status, a full spa and two restaurants. Behind the stoves, Jean-Paul Acker, formerly of L'Oustau de Baumanière, works with intelligence and precision, and for the past two years has been developing a convincing version of French gastronomy. The tasting menu is exemplary, with free-range egg, sparkling white with marjoram, candied yolk, chanterelle mushrooms and onion reduction, osciètre caviar, Alsace green beans with fresh thyme, vinaigrette with lobster juices, French veal in two ways, rosé with seaweed and savory confit, zucchini pressé and Alsace crémant jus, raspberry in light mousse and sorbet, raw and confit bell bell pepper, crunchy shortbread and hint of hot pepper. Well-stocked cellar.
