Under the gaze of herons and bulls, this wild corner of the Camargue is home to an atypical place, and a chef who is no less so. At the head of his brigade, you could call Armand Arnal the locavore general. With a marked increase in popularity this year, he works off the beaten track in a huge vegetable garden that's not just there for show. His cuisine, which sometimes has a militant edge, is a fitting tribute to plants. Velouté of wild herbs and cosmos flowers, matured Mediterranean bluefin tuna, tomato and first grapes, just-seared squid, eggplant with shiso vinegar, pigeon à la flamme, garden pears and Sichuan bell pepper confit and roasted figs with honey, long pepper, goat's cheese brousse and fig leaf ice cream. It all works perfectly, served by waiters who know exactly what's in each dish. The wine list remains in the spirit of the house, with a good selection of natural, local wines (Bandol rosé Château Sainte-Anne, Théophile Milan "Luna et Gaïa" 2020, Domaine de Lauzières "Sine Nomine", Dominique Hauvette "Jaspe").
