Chef Douglas Aburto-Barria, originally from Puerto Natales in Patagonia, is at the helm of the restaurant, where he marries with finesse and dexterity dishes never seen before in this 13th-century residence. The menu, which is renewed monthly to reflect the flavors of the garden, takes you far, far away from the Bouches-du-Rhône. Every day, a dish of the day and suggestions, as the owner continues to innovate. Salmon and tuna ceviche (or salmon and shrimp) on a bed of salad, honey and balsamic vinegar cream with potatoes or sweet potatoes, beef empanada, crunchy Venezuelan arepa, a cornmeal turnover with chicken and avocado (or pork and cottage cheese)... The colorful, fragrant recipes are endless. All year round, the terrace on the town hall square offers a breathtaking view of this pretty village nestled in a triangle of Avignon, Arles and Nîmes.
