Christian Etchebest's troquets, now numbering five, have enjoyed continued success. The canteen on rue Daguerre keeps its promises, with a popular setting, red, wood, white, banquette and slate, and well-executed traditions: mayo eggs, razor clams, shrimps grilled a la plancha, cod, lemon beurre blanc, Basque txistorra and creamy purée, prunes with armagnac and black tea.
