Christian Etchebest's troquet on rue Daguerre is a friendly little cantine, where the cuisine is rich in products from the Basque region, sourced directly from Ospital in Hasparren. Don't miss Christian's knives, his signature dish, but for purists there's also grilled pig's ears. The main course features spicy "txistorra" sausages on a creamy purée. Desserts are fairly classic, but a warm chocolate tart with whipped cream rounds off the meal. Wines at reasonable prices are available to accompany this gourmet cuisine. Please note, no reservations.
