Christian Etchebest's troquet on rue Daguerre is a friendly little cantine, where the cuisine is rich in products from the Basque region, sourced directly from Ospital in Hasparren. Don't miss Christian's knives, his signature dish, but for purists there's also grilled pig's ears. The main course features spicy "txistorra" sausages on a creamy purée.
