A pleasant table in the center of a modern, well-kept regional bistro. For almost twenty years, Thomas Protot has been bringing his terroir to life in a beautiful way, with a sharp eye for seasonal products, from the sea or elsewhere: asparagus tartlet with haddock emulsion, parsley ham, snails, back of cod with almond milk and satay sauce, bourguignon purée... Prices remain reasonable, desserts are classic and well-cared-for, and the cellar, of course focused on the Côte de Nuits, offers some interesting opportunities.
