Gault&Millau's review 2026

Having worked at David Zuddas, Stéphane Derbord, and Lameloise, Thomas Protot brings with him experience from top restaurants and a refined sense of taste, which he has been putting into practice since 2007 at his charming bistro in Nuits-Saint-Georges. This young Gault&Millau-recognized talent has found his stride and his niche, championing an authentic Burgundian dining experience. We keep coming back for the parsley-crusted ham, poached eggs with Chardonnay sauce à la meurette, cod fillet with seared green asparagus, barigoule sauce, and wild garlic pesto, and a Corton pigeon: the grilled breast, the confit thigh, and the wing as a croquette, or even a classic beef bourguignon.
