Chef Guillaume celebrates the taste of raw ingredients, thanks in particular to instant cooking and skilful seasoning. Signature dishes include veal sweetbreads with a hearty homemade jus, or mashed potatoes with hay-smoked butter. The Chef favors 0 wastage and works with all products. The house also smokes salmon and sausage. Le rocher Bruyère, a homemade ice cream and whipped cream with tonka beans, is a nod to the estate's stunning views over the Vendée bocage.
