Chef's Restaurant You might think you're entering La Villa Madie by the back door, but beware of misleading perspectives: the brasserie itself is already big. The same love of the product is evident at every stage, with a remarkable mastery of cooking techniques, textures, seasonings and temperatures. It's a real pleasure to rediscover these recipes, capable of concealing behind apparent simplicity a marvellous range of sensations, which a competent chef would ultimately have to reveal. Under the guidance of Dimitri Droisneau, Xavier Abadie and Illana Grobier make beautiful memories, a magnificent pissaladière with crisp, delicate pastry, a superb filet of roast duckling with fine seasonal vegetables and an exemplary ginger-scented broth. The warm chocolate tart, with roasted hazelnuts and a heart of vanilla ice cream, transgresses all decorum. Small cellar, but access to the large one is available on request.
