Gault&Millau's review 2025

An opportunity to eat well in a setting luxurious enough to avoid faults of taste. La Bauhinia is the Shangri-La's French table, offering a little fusion and a little Asia to world travelers. If you neglect the caviar and tuna tataki, the choice remains wide with roasted octopus yuzu kosho and zucchini pickles, good flame-burnt mackerel, cream of mussel salicorne and horseradish, lean meat in banana leaf gumbo mango and spiced rice, in a mostly marine choice. The lunch menu, with no choice, can be a good option to limit the expense (around €100) à la carte, with pretty desserts by pastry chef Maxence Barbot. A classic and expensive wine, Vacheron sancerre by the glass at €22.
