Chef's Restaurant On a pedestrian street in the historic district of Argelès-sur-Mer, an old-fashioned blue-gray storefront, wooden tables, a knife for the entire meal, plates designed by local ceramists, a blackboard on one side of the wall and Stéphanie's paintings on the other (a room on the second floor hosts temporary exhibitions by local artists). This is the passionate spirit that animates Stéphanie and Thibault Lesage's home, in charge of a cuisine rooted in its terroir, but with an ongoing modernity and research, as in this egg yolk confit in salt that accompanies pan-fried green asparagus with miso butter and anchovy and almond purée; tastes are in harmony in clear, uncluttered dishes like this wheat risotto and rice chips around red tuna on a bed of celeriac; Stéphanie is always at the helm of stunning desserts like these garriguettes and their Burgundian sauce made with reduced wine and vegetables, with a dulce jelly adding a vegetal touch. The wine list is always in tune with independent winegrowers who respect the living world, and with every sip you inhale all the fragrances of Roussillon. A fine table run by a couple in tune with their region and its times, and two confirmed toques in no uncertain terms.
