This is an address that has never disappointed us, retaining its two fine toques over the years while evolving favorably. In this quiet, central village street, the atmosphere is serene, and the cuisine mastered by Thibaut Lesage, who offers a short à la carte menu of his fine, precise, seasonal versions: celeriac remoulade with pear gel and full-bodied celeriac juice, daily fish with local vegetables, farm pig shoulder confit in pig fat, spinach with miso, grilled rice with reduced juice. Two formulas at €46 and €56, with equally well thought-out desserts, a well-stocked regional wine cellar, and an always professional and smiling welcome from Stéphanie Hug, pastry chef and sommelier. Weekend takeaway options include boles de picolat and homemade smoked salmon.
