Chef's Restaurant Having worked at Savoy and Sylvestre Wahid, the young Ilane Tinchant has no shortage of experience, and here proves his full potential. The imposing building on the port of Carry is the setting for a dense, personal seafood experience, featuring (already) mature Mediterranean cuisine: langoustine, sparkling carapace and cardamom; textured cuttlefish confit in its ink, tempura and garlic cloud; anglerfish aioli, seasonal vegetables, black garlic and fennel; a dessert of poached rhubarb, creamy namelaka and strawberry sauce.
