Gault&Millau's review 2026

Jérôme Roy, who made a name for himself in Provence, has built up a loyal clientele in Touraine in just a few years. This local boy knows his region well: the produce is there, the breeding is superb and the market gardeners are on his doorstep. His cuisine is full of finesse, yet accessible and gourmet enough to appeal to a wide range of customers. His universe is clearly defined: top-of-the-range gastro with noble products and impeccable classical technique: pan-fried scallops with beard fumet, pineapple reduction, Jerusalem artichoke and coriander texture, roast beef fillet with fig and celery confit, beef consommé, hare à la royale, Santo Domingo chocolate ganache, mucilage jelly, Vietnamese pepper cream. Each plate has its own signature, its own personality, and the €75 menu fully deserves its two toques. Courteous, diligent service, well-constructed regional cellar, with fine labels from other regions.
