François Sauvêtre's masterful local cuisine is based on carefully thought-out combinations and precise cooking. The langoustine, just seared, is accompanied by an espuma bisque that avoids the pitfall of heaviness. The red tuna from Saint-Jean-de-Luz reveals a balance between the smokiness of the barbecue and the sweetness of the peas in two textures. The picanha, served blue, finds a coherent accompaniment in the seasonal artichoke and stuffed morels. The strawberry-asparagus-vanilla dessert is a perfect example of technical research, playing on temperatures and textures without becoming a gratuitous demonstration. The front-of-house team provides vigilant, appropriate service, while the young sommelier expertly guides us through a menu that favors Bordeaux wines, but also offers a wider selection, including some orange wines. The clear, seasonal menu and the two four- and six-course menus showcase local producers in a refined atmosphere and decor.
