Close to the Jardin des Carmes, Régis and Nelly's restaurant is a recommended meeting place in the prefecture, for its sober style suited to any occasion, and the chef's plates, which are elaborate and demonstrate a certain research. The ideas are contemporary, with a few fusion trends thrown in for good measure, giving the terroir new colors. For example, on the €32 menu, Scottish salmon carpaccio gravelax, beet and Granny Smith apple, wasabi, roasted wild sea bass, cereal risotto, broccoli, creamy shellfish jus and citrus condiment, Maison Joffrois Salers beef, potato pressé with local ceps, Brussels sprouts and shallot confit, or Breton sablé with caramelized apples, hazelnut cream, carambar chantilly and salted butter caramel. A cellar to match.
