The best address in Romans, a little off-center behind the train station but easy to get to, is a beautiful maison de maître hidden in its garden. At the end of the driveway, the elegant dining room inspires a desire for tradition. Chef Olivier Christoffel responds with a strong personal touch: milk-fed veal tataki with verdurette sauce, beef chips and vercorais (a local cheese), roast fish with vegetable barigoule, couscous au jus, raspberry pogne diplomate and sorbet, apricot coulis, in a serious and well-served proposal, at €48. No mistakes, neither on the plate nor around it, safety in the best conditions and an appropriate Rhone cellar with some fine bottles.
