In the former estate of the Marquis de Sade's family, just east of Carpentras, the sumptuous period château is now home to a top-class hostellerie, in a luxurious, well-appointed setting that blends history and modernity, with definitive comfort. The chef's classic, yet slightly serious cuisine caters for all tastes, and demonstrates real savoir-faire, as seen in the perfect egg at 64°C, small spelt risotto and roasted celery, in the fillet of saithe, panisse, onion soubise and olive tapenade, in the spice-braised pork belly, grilled sucrine and onion compote, or in the lemon tart, Breton shortbread and lemon cream. Nice local cellar.
