In this refurbished establishment at the foot of the Pyrenees, in an idyllic setting, chef Jérémy Lasserre, who has worked in some of the world's finest establishments (Willer, Ducasse, Gagnaire in Asia), unveils his cuisine, shaped by his international background and using local produce. We are welcomed as regulars and hotel guests on a journey with the chef. The cuisine is typically French, with Asian accents such as the chef's signature Japanese perfect egg, which is adapted to the season, this day with asparagus chunks and velouté, morel mushrooms and vitelotte chips. And we're not forgetting our local producers and kitchen garden, like the scallops tartar with shavings of duck foie gras from Daniel's in Saint-Gaudens and flowers from his kitchen garden. The duck, also from Daniel's, gilded with honey and sugared almonds, with its sweet potato and ginger purée and its fig and Vietnamese coriander sauce tends slightly towards the sweet, although the whole remains pleasant. Dessert also features garden ingredients, with wasabi arugula from the kitchen garden perfectly complementing passion fruit cream and mango sorbet, in the spirit of a lemon meringue tart with a trilogy of jellies. The service is excellent, including the digestive walk to the mountains, and the wine list is a little limited.
