Chef's Restaurant In moving his restaurant from Paray le Monial to Digoin, Nicolas Martin has found this central, renowned location, and the historic setting of the former Hôtel des Diligences, whose hotel section, renamed Villa Pona, has also been thoroughly modernized. Last year's award-winning young chef has kept to his virtuous line of modernized terroir with a focus on the region. This is particularly true of his high-performance breakfast menu, in which he recounts the undergrowth with a poached egg with mushrooms and cream, and the farms of Burgundy with a saddle of rabbit stuffed with mint, candied carrots and glazed turnips, followed by candied pears with red wine and buckwheat honey ice cream.
