Chef's Restaurant There's no doubt about it: Nicolas Martin is one of Digoin's top picks. We've been following him closely, and here he offers an elegant table and dishes that have become more refined over the years. In the venerable setting of the former Hôtel des Diligences, he has achieved a charming mix of modern table setting and contemporary cuisine, focused on the product: scampi with potato and a very good bisque, lean carrot on a herb broth, a rustic alliance of rib-eye and oxtail with parsley before the must-try Grand-Marnier soufflé with orange carrot sorbet. Good "de l'Instant" menu at €39.
