The menu is fairly simple but well-executed: a foie gras tart with plums, rye, and speculoos; a fillet of sea bass with mashed potatoes, chives, spinach, and beurre blanc; a crispy dish of beef cheeks braised in red wine, roasted carrots, and mint-pistachio bibeleskæs; or a pistachio fondant with orange blossom and raspberries.
