Admittedly, the tuna tataki and the perfect egg are a reminder that modernity has its imperatives. Fortunately, however, Rémi Poulain's personal initiatives and touches enable him to break away from the constraints imposed on him. In this pleasant dining room with tightly-packed tables, he produces well-turned, clean and controlled dishes, with a few whimsical touches: scallops bergamot daikon celery purée, lamb shoulder Jerusalem artichoke Roscoff onions cinnamon and garlic confit. And if you allow yourself to digress to the sweetbreads or foie gras with figs, don't forget the lovely purée as a little extra. The profiteroles for dessert are well-balanced, as is the attentive service.
