A fine establishment, well known to the people of Saumur, who have been enjoying their festive meals here for ages. Anthony Vaillant, who has been at the helm for seven years now, leads the way with a cuisine based on well-turned products, where the culinary gesture is always sure and pertinent: tuna maki with hummus radish wasabi cream soy sauce, foie gras confit with persimmon, salmon rolled in herbs and in a melting leek tartar with red bell pepper cloud, confit pork belly with honey eggplant caviar; prices remain low, including in the cellar, well stocked with anjou and saumur.
