Chef's Restaurant In just over fifteen years, Charles Thuillant and his wife Mi-Ra Kim have imposed their style, a beautiful harmony between Korea and France, to become almost institutional in Deauville and change the habits of the Normandy resort. Here, modernity and openness to the world prevail. The menus are well staggered (with a very successful lunch formula at €46) and perfectly represent the house: tuna tataki ponzu with tarama lemongrass, ravioli stuffed with chorizo morteau and cauliflower sesame emulsion, nodi marini mussels chorizo with fennel sriracha mussel emulsion or fish of the moment with turmeric juice in the fine €79 proposal, finished with an inventive chocolate beet cherry blackcurrant sorbet dessert. Interesting, varied and fairly priced wine cellar, always accommodating and attentive service.
