This is Saint-Emilion's top tip for tourists entering the old town via Rue du Clocher: just a few steps away from this well-run bistro run by the Perse family (Château and Hôtel de Pavie), with simplicity and efficiency. This is also the right way to proceed when reading the menu: straight to the point with charcuterie, oysters from Bréhat, tartare, poultry supreme with polenta or lamb shoulder confit if you're well accompanied. The extensive cellar will follow you right through to the seasonal desserts (strawberry mystery, rhubarb confit in olive oil...).
