Just a few minutes from Bourgoin-Jallieu, Oriane and Romain Hubert demonstrate that good is not the enemy of good, creating a cuisine and experience that are as aesthetic as they are virtuous. It's not just know-how and a solid vision of terroir, but a genuine love of the product and an ecological conscience, each acting as a creative constraint. L'Émulsion is the gastronomic section of this beautiful manor house, which also includes its fiery Lo Fieu bistro and charming chambres d'hôte. In his hidden menus, the chef reveals himself to be an excellent saucier, serving a predominantly plant-based cuisine with great finesse, both in terms of presentation and balance. The menus are very well constructed, from €65 to €120. A fine selection in the cellar, especially of Corsican wines.
