After training as a salesman, several years in a start-up, then a career in wine abroad punctuated by numerous trips, Jean-Mathieu returned to his home region with an idea in mind: to create a place in his own image, dedicated to the terroir and exceptional products, in a family atmosphere. A year later, after honing his skills behind the bar, the entrepreneur moved into l'Embuscade. Over the past few months, he has breathed new life into this festive district of the Barrière du Médoc, which until now has been lacking in entertainment, particularly in the evenings. Surrounded by his chef, Loïc, who trained at the Pavillons des Boulevards and has worked in a number of top restaurants, and his little cousin, Quentin, he offers 100% home cooking, prepared in an open kitchen from fresh, mostly local and organic produce, sometimes even from his own or his father's garden. At lunchtime, the simple yet refined starter-main course-dessert menu changes daily. Don't miss: the superb double croq, the healthy version of the buddha bowl and the incredible tarte Tatin! In the evening, tapas and top-quality platters take pride of place: Iberico ham sourced directly from a producer in southern Spain, mature farmhouse cheeses (Saint-Nectaire, Comté 24 months, Ossau-iraty), dried duck breast or gravlax salmon prepared on the premises, not forgetting rillettes de la mèr(e) with salmon (a family recipe dear to our host).
