François Banfi has returned to his native region after working in some of Paris's finest restaurants and large brasseries. His goal: to take over L'Echanson, a fifty-year-old establishment, and give it a new lease of life! Coming from a family of restaurateurs, the manager decided to focus on traditional cuisine for lunch, and a bar offering a menu of small dishes to share. While François Banfi likes to go back to the basics of French cuisine, he excels in the art of modernizing tradition: a culinary paradox he masters by combining different flavors. Minute cooking and fresh ingredients are the order of the day. We go there for the pleasant setting, the menu that changes every 15 days, the dishes (as qualitative as they are copious!) and above all: the homemade terrine, a family heirloom whose secret we won't tell... The attractive wine list (some forty references) adds to the desire to come back. Please note: on Saturdays, François Banfi can organize private table d'hôte dinners.
