For all regulars, L'Écailler choletais sounds the iodine rally with plates of shellfish and oysters. Oysters, whelks, shrimps and langoustines are regularly sourced from Brittany. You can stick to what's natural, or opt for more convoluted dishes, such as snacked scallops with spinach risotto, curried mayonnaise and vanilla hollandaise, or sole meunière with soy sabayon.
