Taken over in April by Arthur in the kitchen and Louis in the dining room and as sommelier, both of whom had previously worked at Coutanceau, L'Écailler is embarking on a new chapter with consistency and commitment. The cuisine is based on local, seasonal produce, prepared with precision and sobriety. Plates are well-balanced, legible and technically well-executed, punctuated by masterful creative touches: one-sided cuttlefish, strawberry-pea, chocolate powdered with shrimp... The meal is punctuated by a beautiful succession of attentions, which add generosity without weighing down the whole. The young service team combines professionalism and efficiency, with genuine consideration for customers and staff alike. The cellar, built with care by Louis, offers a wide selection of wines chosen with passion, combining references from established winemakers and personal discoveries. Housed in the oldest house in the port of La Flotte, the décor is sober and soothing, in perfect harmony with the restaurant's culinary identity.
