One of the department’s finest restaurants, true to its roots and traditions, with chef Sébastien Proux’s meticulous craftsmanship—he pays close attention to the origins of his ingredients, such as vegetables from the garden or beef from Limousin. Simplicity and great value with the €37 set menu: beef tataki with orange and chanterelle mushrooms in a sesame vinaigrette, pollock in Nantua sauce with fresh pasta and vegetables, free-range cockerel with wild mushrooms, and pear millefeuille with red wine.
