While the inexorable decline of brasseries near train stations—largely due to competition from fast-food chains—is evident everywhere, the one at the Grand Bristol is holding its own, offering travelers a wonderful first taste of Colmar’s cuisine. It’s a classic and effective setup, featuring the essentials: calf’s head with gribiche sauce, sauerkraut with five meats, Viennese veal cutlet, fries and vegetables, chilled Vacherin cheese, and a seasonal fruit tart. Friendly service and Alsatian wine.
