Surprise at lunch, surprise at dinner, Nicolas Guilloton continues to focus on a clientele who see the restaurant above all as a relaxation center where you are taken in hand from starter to dessert. So much the better for enthusiasts of this "letting-go" approach, with a cuisine that's adapted to their tastes, rather virtuous in its choice of products and origins - local seasonal produce and a focus on plants - at prices in keeping with the restaurant's reputation, and quite affordable for lunch at €59. Cellar with good references from all regions.
