Chef's Restaurant Nicolas Guilloton didn't wait for fashion to take an interest in local produce and sustainable catering. Right in the center of Lyon's peninsula, this discreet restaurant, with executive chef Thomas Belval, offers local, plant-based cuisine in an intimate, contemporary setting. The plates are delicately laid out, as is the gigantic wooden sculpture that adorns the wall of the dining room and serves as a bench for diners. We still regret the unique menu, hidden and imposed at so many courses (a childishness that lasts...), but we also know how to appreciate the content. Recently, the starters on offer were all vegetable, with Jerusalem artichoke and turnip flan, and beet in several forms in an incredibly gourmet jus, two bites of Arctic char cooked to perfection and accompanied by a vegetable blanket, like the duck Rossini and its devilishly good blackcurrant sauce. To finish, two desserts: the first all citrus with a champagne sabayon, and the second, a work on honey and pollen that alone is worth the trip. The wine list is well-stocked and well-advised.
