In the center of Aigues-Mortes, Nicolas Épiard's table is one of the most cheerful in the medieval city, a warm rendezvous decorated like an indoor garden, where the chef practices his fusion cuisine. The ideas are well renewed and come in three menus at €43, €49 and €69 for five courses. The cellar is sought-after, with fine references from Languedoc and elsewhere (Vincent Gaudry, Mas Amiel, Pillot-Henry, Vieux télégraphe, Château Haut Lignières, Sylvain Pataille, Château La Grange...).
