We're always wary of well-placed addresses overflowing with tourists. Sometimes, however, the surprise is a good one. And we can't blame Caroline Liénart for having set up shop in the historic heart of the town, with its lovely terrace surrounding the ancient fountain, and at the foot of the church of Saint-Michel, which makes up for an insignificant room. On a warm summer's evening, a really good pistou soup (yes, perhaps a little salty, a little garlicky, just to be nitpicky...) with excellent little white coconuts, a well-chosen and well-cooked rack of pork melting with browned and puréed carrots, forgoing the fashionable effects (gazpacho, tuna tataki...), makes for a moment of good, inexpensive pleasure. You can do without dessert (you're rarely both a cook and a pastry chef) and enjoy a short, loyal regional cellar, supported by friendly, attentive female service.
