There are signs whose musicality resonates like a promise of lightness, of letting go, of nature... Here, the moor dappled with yellows in springtime, the sea as a horizon from which the silhouette of the island of Groix stands out, are offered in their entirety to the gaze of customers comfortably seated in a room whose warm furnishings contrast with the rough concrete of its architecture. As part of a committed approach, the menu is a militant reflection of a cuisine that cares for the environment and promotes local producers. The surrounding gardens are a source of inspiration and supply. For example, the "leeks and egg mimosa" are carried by a light smoked cream, a coriander vinegar gel and a hint of wild garlic. The beautiful, crispy-skinned hake steak makes common cause with cabbage en papillote and a barley-oil coulis de fanes. The whole dish is sprinkled with crumbs of smoked ewe's milk cheese. As for the poached rhubarb nage, it proves very refreshing, even if the very fragrant rosemary from the garden is a little overpowering. The wine list alone is worth the detour. Smiling, dynamic service.
