Remarkable Restaurant Keigo Kimura's talent lies in linking his Japanese culture to Burgundian life without trying to develop an inappropriate fusion. Settled in the heart of Dijon, he doesn't mix genres: when it comes to chawanmushi, he doesn't slip in snails, but rather the first peas of spring, and when he proposes a supreme of poultry stuffed with herbs, he restores the original, local tastes. An art of balance, of true flavor, which he cultivates very well in his evening Dégustation menu at €95 or €120 in six or seven courses, with maigre lacquered with Yuhan (Taiwanese whisky), tartar of poultry and marinated egg, pork shiitake plum pie. An attractive cellar and gentle, precise service for flawless organization.
