Keigo Kimura's cuisine remains one of the most attractive on the market, thanks to its consistency, its measured, controlled audacity and its precision. A market menu at €48, and a tasting menu at €100 allow you to appreciate a whole range of original dishes, in particular plant-based combinations (artichoke olive green sauce, rice chorizo grape yuzu) or seafood (monkfish broccoli miso butter, smoked eel green asparagus pie). Smoked and fermented dishes, as well as regional traditions (guinea fowl in two courses with gribiche sauce) hold no secrets for this skilful and imaginative chef. An extensive wine cellar featuring the great names of Burgundy.
