Not far from the beach, but far enough, Anthony Vallette takes the liberty of delighting connoisseurs, leaving aside mussels and fries and fish from elsewhere. A slightly baroque touch in the choice of crockery and combinations, good technical skills and a few bottles for connoisseurs, combined with Jessica's professionalism and Anthony's poetry, set the scene. All that's left to do is savor the scallops rubbed with tonka bean, egg, piquillos and hollandaise, the crispy foie gras with strawberries, vanilla vinaigrette and vegetable coulis, the "coup de cœur" meat with asparagus and morels from Normandy, before the "surprise" dessert, featuring chocolate in a three-dimensional inspiration.
