Nicolas Fort has taken over the former stables of General Lamarque, an elegant location in the heart of Saint-Sever. The heavy stonework and rustic architecture harmonize well with the sobriety of the decor, which exudes a regional atmosphere in phase with the chef's ideas. The spring menu is inspiring, with Landes pâté-croûte, foie gras, duck, Saint-Sever chicken and asparagus, hake aioli with asparagus and steamed vegetables, bread-crusted quail flavored with herbs, cabbage and meat jus, and poached pear puff pastry with asparagus/rhubarb sorbet. A warm welcome.
