Remarkable Restaurant Right in the center of town, behind a discreet facade that you'd almost ignore, lies an exceptional table. Aromate reveals itself as an intimate, almost domestic interior, the design lounge of an aesthete friend who welcomes you. The friend in question is Chef Mickaël Gracieux, and behind his humility, he orchestrates a cuisine with a precision that leaves no one indifferent. He's no stranger to fine establishments: Alain Ducasse in Monaco, Joël Robuchon in Paris when the great chef was still behind the stove, L'Oustaou de Baumanière... One might think that the chef could have followed in the footsteps of his masters. Instead, he chooses to go beyond codes and expectations, to surprise. Not necessarily at the first bite, but inevitably at the second. You can dine here exclusively, on three menus: 5-course Persil, 7-course Basil and 5-course All-Vegetable. Crab in fine favouille jelly under a warm fennel emulsion; whole Nice zucchini, drenched in its Piedmont hazelnut praline with a Barolo vinegar-twisted parmesan broth; tassergal de ligne, a too-often-overlooked fish with translucent, firm flesh, cooked in lemon leaves and covered with a lemon-lacquered sabayon, on a bed of basil peas. The desserts are those of a cook who gets straight to the point: chocolate capeline, espresso coffee ice cream, hazelnuts like scrunchies, crunchy and caramelized, a siphon of Madagascar vanilla. In the dining room, Élise Morselli-Lourtet, his wife, gives the "la" to a beautiful orchestration filled with kindness. The cellar, with its 300 references, will suit any occasion. Aromate is a discreet but essential address, where the chef's humility is transformed into beautiful moments of gastronomy.
