A fine producers' restaurant north of Pau, with Xavier in the kitchen and Julie in the dining room. The team defends a market cuisine, displaying its suppliers first and foremost, and reminding us of the link between the craftsman and the cook. The menu pays homage to the region, with a cream of chanterelle mushrooms and Espelette pepper, Saint-Jean-de-Luz fish and risotto, Chalossais veal fillet and root vegetables, and a dessert of autumn fruits, chocolate and light hazelnut mousse. Two formulas at €20 and €31.
