Gault&Millau's review 2026

Julien Medard has come a long way in twelve years, and today, with his wife Delphine, offers quite simply the best table in the department, in this elegant setting of rough stone, painted beams and emerald drapes. The catalyst came just after the pandemic, with a gastro offer that today consists of a large menu in two formats, in five or eight courses, with a strong emphasis on local produce, cheeses, livestock and vegetables from nearby market gardeners. The chef holds to his line, sometimes systematically, but with research and sincerity. From the starters (trout gravlax and Berry lentil purée, veal head pressé), the focus is on precision, and each dish is thought through. The snails, a little dry, with a sweet garlic and red cabbage cream, like the Sologne sturgeon (not the easiest fish to make the most of), benefit from great attention to preparation and presentation, with this gourmet blanquette sauce on salsify and black pudding, and the signature mimosa egg is a real treat, with beet and goat's blue cheese. The buffalo comes from a farm unique to the region, Savigny-en-Sancerre, boletus parmentier and potato gel with lacto-fermented pear, before an excellent apple dessert based on the idea of Tatin. An excellent front-of-house team, with two young, motivated waitresses, and a sharp sommelier, who oversees a complete, faultless wine cellar, offering sure-fire values from all regions, as well as some great signatures and cutting-edge discoveries from the nearby vineyards of Sancerre and Menetou.
