Gault&Millau's review 2025

A striking modern architectural design for a building with an equally contemporary, chic decor. Jennifer and Loïc Delétraz have a legitimate ambition to grow their project. The young chef, who has worked with the greats (Trama, Petit, Constant, Giraud...), has a vision of a well-dressed, inventive terroir. His menu reflects this, between fashion and tradition: pan-fried scallops with celery and vanilla coral stuffing, poached Arctic char with chard and onion jus, two-cooked Bresse poultry with fennel and lemon confit, pressed Cercier apples with Genevan saffron custard. Fair prices, 5-course tasting menu at €70.
