Gourmet Restaurant A safe bet near the Palais de Justice, a small treat for friends offered by Olivier Paget, a chef with a firm, deft hand who has made his own way without copying anyone else. The neighborhood bistro of yesteryear has become an elegant table whose regulars praise its merits. It's true that, at €33, the return is more than fair, with the sea urchin and leek velouté with pistachio pumpkin chantilly, the filet of plaice with tarragon milk and braised endive stuffed with cauliflower brandade, and the caramel chip savarin with milk chocolate caramel ganache. Right tone, choice of products, impeccable service and a well-stocked cellar for connoisseurs.
