Gourmet Restaurant Hailing from the Beaujolais region, and having worked with the likes of Rostang, Dutournier and Gagnaire before settling in Lyon, chef Olivier Paget has the experience of the grandes maisons, the memories of the countryside and the spirit of reconciling city and nature. His cuisine reflects this love of the terroir, with open-plan dishes that explore the horizon while respecting the seasons. The autumn menu at €64 takes us into the forest, with a salmis of wood pigeon with mushrooms, salsify and walnuts, hunter's style, grated combawa, a noisette of fillet of venison in verveine Viennoise, Macaire apples with chestnuts and reduced diane sauce, crunchy redcurrant jelly, and finally a two-chocolate cake, hazelnut crunch and caramelized pecans. Fine regional wines from the Rhône and Burgundy regions (Jobard, Métras, Foillard, Ogier, Montez...).
