Gault&Millau's review 2026

We're here in the heart of the Pévèle region, just a few kilometers south of Lille. Country roads, fields as far as the eye can see, a few small villages to cross, and here we are, in this former Flemish farmhouse, next to the brewery and neighboring pretty, picturesque gîtes. Strong values for an equally powerful terroir and a place marked by its agricultural past. This is what drives the teams led by Thibaut Fourdrinier, who took over this renowned address. Short circuits are the watchword here, as detailed in the menu presentations. All products come from the surrounding area, less than 15 km away, in order to preserve the local economy, with the exception of Boulonnais fishing and products from the Artois fish farm. Responsible practices also include the restaurant's own beer brewery. As for the cuisine, a wave of freshness accompanies a general simplicity and gentleness. The flavors of the products are showcased to the full, without overdoing the artifice and seasoning, such as the Artois trout confit or the almost raw mackerel. In a setting that has just been redecorated, with work still in progress, the gourmet stroll takes in white or green asparagus depending on the dish, bao de cochon from Ennevelin, poultry from Landas and all those Pévèle vegetables. For dessert, strawberries and rhubarb from Coutiches will be served with a revisited tiramisu. A cellar that also evolves as we meet with producers.
