Gault&Millau's review 2026

The table has found its feet, and the regulars are still there, despite a change in cuisine since the establishment was taken over. Matthew Bayliss offers generous, well-crafted dishes. You'll find the real flavor of fine produce worked with just the right accompaniments, which the chef sometimes presents and explains in the dining room. Finesse at times, gourmandise too, everything is there to ensure you have a good time. Cassandra Potier provides a very pleasant relay in the dining room, and the cellar covers the whole of the South-West, from Languedoc to Bordeaux.
