Gourmet Restaurant The Tarbais tradition is well defended in this institution, which is nonetheless showing signs of renewing itself and moving with the times. The cuisine attempts, with varying degrees of success, to push back the city's classic codes with carefully-crafted, appetizing dishes. Pleasant appetizers include terrine of fried knuckle of pork, sucrine brûlée and quail egg, a hearty, meaty starter, back of skrei cod cooked at low temperature, cromesquis of cod brandade and leeks, and a lovely chocolate and caramel dessert. Large, classic cellar, with a good regional selection, attentive and efficient service.
