Gault&Millau Academy's member After Christophe Moret's unconverted attempt at the helm, l'Ambroisie has once again become the beautiful address that is indispensable to its admirers, Bernard Pacaud's restaurant, without sharing or prevaricating. We won't go into yet another discussion of this atmosphere, which is so Parisian, so traditional, and so strongly influenced by the personality of its leading man. L'Ambroisie is clearly the setting for a certain idea of gastronomy and even of the restaurant trade, one that brooks no comment or question, since it is the path traced and willed around dishes that are as magnificent as they are timeless: langoustine feuillantine with sesame seeds and curry sauce, sole viennoise with sorrel, chanterelles with fresh almonds, pomme de ris de veau braisée à la diable, ravioles with sage, fine shortbread tart with bitter cocoa, Bourbon vanilla ice cream. To the delight of all those who believe in great French cuisine, we're not at the corner bistro listening to the litanies and benefits of the imposed hidden menu. Here, everything is clear, the menu is free, as visible as it is legible, and the customer who leaves €350 on the table has the right to choose what he likes.
