Prestige Restaurant New deal in continuity at L'Ambroisie: Christophe Moret moves to Place des Vosges to succeed Bernard Pacaud who, after more than forty years at the top, is handing over the reins, but gradually, as he will accompany the new chef for as long as necessary. We know all the qualities of the eminent Ducassian chef who regaled us at the Plaza and then at the Shangri La. Nor is there any doubt as to his ability to run the place: he has broad enough shoulders to guarantee regulars the classic near-perfection that delights visitors: the chaud-froid of soft-boiled egg à la Kiev and Kristal caviar, the interlude of lobster nage réduite à l'anis étoilé and the famous veal chop with chanterelle mushrooms are in good hands. We'll be sure to check it out as soon as the new amphitryon takes up his post, naturally retaining the toques while we wait. At the end of 2023, Christophe Moret announced his departure. He will be back at the helm of Les Crayères, the legendary Reims restaurant, in spring 2024.
