Gault&Millau's review 2026

Tucked away in front of the Halles, this Alouette has all the makings of a fine bistro, run with authority and talent by Nicolas Servant. Here, it's the market and the season that decide, and the chef's job is to make the most of the product without distorting it. There are no restrictions here, and red tuna as well as free-range chicken, lamb, mackerel and lobster can all be included in the composition. A connoisseur's cellar.
