A great Corsican restaurant in the Saint-Gervais neighborhood, with a great atmosphere and excellent local ingredients. The style is fairly traditional, featuring well-executed classic recipes—a charcuterie platter, of course, followed by a soft-boiled egg, tomme cream, crispy prisuttu, and green olive oil; sea bass fillet with Corsican brousse mousse, virgin olive oil sauce, and crispy polenta; veal loin à la plancha with roasted zucchini and zucchini caviar, cooking juices with Cap Corse, and a chestnut cake with nuciola cream and hazelnuts.
