In Rimbach, a tiny village nestled at the foot of the Grand Ballon, this house happily combines the calm of the Vosges landscape, the charm of a family address and the elegant simplicity of a warm welcome. Completely refurbished, the establishment has an impeccable appearance, a lively and warm atmosphere, and a cheerful sociability that makes meals a true moment of sharing, served at very reasonable prices. In the kitchen, the line is classic, clear and reassuring, with a few contemporary touches, as is immediately apparent with a delicious emulsion of Jerusalem artichokes with hazelnuts, both suave and lively. The frogs' legs, fresh and well-cooked, suffer only from a garnish that's a little too overpowering; the pollack, remarkably fresh and precisely cooked, deserves a more concentrated broth to better support its finesse; as for the low-temperature veal, very tender, it confirms the care taken with the product, despite a jus that could gain in depth. For dessert, the vacherin glacé (iced vacherin) reveals some lovely fruity flavors, even if the sorbets are too firm, while the chocolate fondant with tonka bean, prepared à la minute, is a more obvious winner thanks to its greediness. The wine list, centered on Alsace and enriched by references to other regions, appears well constructed, coherent and reasonably priced, with a focus on pairing rather than pomp and circumstance.
